4 Red Bananas Recipes: Quick, Healthy Lunch Ideas 2022

Americans are banana deprived. Although you can find the average Cavendish banana stocked in just about every store in the country, alternative varieties are few and far between. But if you’re lucky enough to stumble upon a banana with deep, reddish-purple skin, buy them immediately. Commonly known as red bananas, they are creamier, sweeter and all-around more flavorful than your everyday yellow Cavendish banana. They’re slightly smaller and plumper than regular bananas, with lightly pink flesh and a slight raspberry flavor.

The red banana owes its distinctive color to the presence of carotene. The redder the banana, the higher the levels or carotene and vitamin C. They’re also a great source of fiber and vitamin B6.

Eat red bananas as you would regular bananas, raw and peeled right out of your hand. Their sweet flavor is also ideal for baking in breads and desserts, or even for frying in oil or butter.

Select bananas that are deep purple in color. A lighter-colored peel is an indication that the fruit is not yet ripe. Allow the bananas to sit at room temperature for several days until they ripen. They’re more delicate than Cavendish bananas, so handle them carefully to avoid bruising them.

Simple Fresh Fruit Salad

• 1 kiwi fruit, peeled and sliced 1/4-inch slices
• 1 banana, sliced, 1/4-inch slice
• 12 green seedless grapes
• 1 (10 ounce) can mandarin oranges, drained, reserve juice
• 1 red plum, cut in 1/2-inch wedges cut wedges in half
• 1 teaspoon sugar or 1 teaspoon Splenda sugar substitute
• 1 lime

Prep Time: 15 mins
Total Time: 15 mins

1. Prepare and mix all the fruit in a bowl.
2. Measure 1/4 cup of the reserved Mandarin orange juice, squeeze in the juice of the lime (apprx 2 tbsp) & stir in the sugar (splenda).
3. Pour over the fruit, refrigerate 1 hour or until well chilled.

Strawberry-orange-banana Smoothie


1/2 cup fresh strawberries, frozen

1 banana, sliced and frozen

1/2 cup orange juice (more if necessary)

Prep Time: 5 mins

Total Time: 5 mins


1. Put 1/2 cup orange juice in blender.

2. Add strawberries and banana.

3. Blend until smooth, adding up to 1/2 cup additional orange juice if necessary to obtain desired consistency (I prefer to use 1 full cup orange juice).

4. Serve.

5. Makes enough for 1 large smoothie or 2 small smoothies.

Nigerian Fruit Salad

• 4 ripe papayas or 4 mangoes, peeled, seeded and cut into bite-size pieces
• 2 red apples, cored and chopped
• 2 ripe bananas, peeled and sliced
• 1 (16 ounce) can pineapple tidbits, well-drained
• 1 cup fresh orange juice
• 1 tablespoon granulated sugar
• 1/2 teaspoon ground cinnamon
• 1/3 cup sweetened flaked coconut

1. In large bowl combine papayas, apples, bananas, pineapple, orange juice, sugar, and cinnamon. Toss to mix well. Cover and chill until ready to serve. To serve, sprinkle with shredded coconut.

Patriotic Banana Split


4 ounces reduced fat cream cheese

1/2 cup marshmallow creme 

1 tablespoon lemon juice

1 teaspoon grated lemon peel

1/2 medium seedless watermelon

6 large ripe bananas, quartered

1/3 cup fresh blueberries

1/3 cup reduced-fat granola cereal without raisins

In a mixing bowl, beat the cream cheese, marshmallow creme, lemon juice and peel until smooth; set aside. Using an ice cream scoop, scoop six balls from watermelon (save remaining melon for another use). In shallow dessert bowls, arrange four banana quarters; top with a watermelon ball. Spoon cream cheese topping over melon. Sprinkle with blueberries and cereal. Serve immediately.

Italian Deli Wraps

• 2 tablespoons butter, softened
• 3 flour tortillas (10 inch)
• 6 slices provolone cheese
• 6 slices deli ham
• 6 slices bologna
• 30 slices pepperoni
• 18 banana pepper rings
• 9 slices tomatoes
• 6 lettuce leaves
• 2 tablespoons mayonnaise

• roasted red pepper
• green olives
• artichoke heart

Total Time: 10 mins

1. Spread butter on one side of each tortilla. Layer each with cheese, ham, bologna, pepperoni, banana peppers, tomato, lettuce and/or optionals to within 2 inches of edge. Spread mayonnaise over lettuce. Roll tightly.
2. Serve immediately or wrap in plastic or waxed paper and chill up to 2 hours.
